As for engine choices, maybe something of some sort of vintage, older than say, 1965. It'll play well with the theme you're after.
You could try any of the older GM engines (such as the stovebolt I6's) or maybe even a GMC 702ci "Thunder" V12, which sounds awesome.

I'll sell you my I6 out of my 48 chevy... That could be a cool power plant. It'll need a serious rebuild though.

I have a deadline of my own to work to with this project. Fuck the concerns about weight - you're building a rat rod out of a Rolls, you can figure it out!
EDIT: At the very least, I think this needs a big inline engine, like a Pontiac flathead straight-8 or something of the sort. V engines are for suckers
