Could someone clarify what paddle valves are along with a better option to them?

The alternative is electrically controlled valves. You press a button and it sends the electric signal to your valves or valve manifolds and it lets the air in or out.
There are two options there. Digital, which means it has a digital read-out and an ECU to control things such as pressure and preset ride heights. Or you have analog which means you just use a universal switchbox and air pressure gauges, but have no ECU brain controlling things.
