You're sure the clutch itself is good right? I knew a guy in school with a 5-speed truck that had a similar problem. Bled everything he could and the pedal still didn't feel right. Turned out a couple of the clutch spring fingers were broke and he didn't drive hard enough to make the clutch slip.
Not sure if that's you're case, but just throwing that out there.
