Help choosing "right" size tire

So I'm new to this and want to get it right the first time, so just looking for some thoughts on proper tire sizes. Here's what I'm working with

Stock sizes
F 15 x 6 45 185 55 15
R 15 x 6.5 45 205 50 15



Current Sizes
F + R 16 x 8 42 205 40, 205 45 Front is pretty good Rear could use spacers



New Sizes
F 15 x 7 45 (will be spacing out 20-25mm) 195 55 ?
R 15 x 8.5 23 215 50 ?

Any help? I'm going to get some tires coming tomorrow and it would be great to get it right the first time.
