I've just acquired some Rays Nismo LM-GT2s and some of the bolts are looking pretty sad. To replace them is it simply a case of removing and replacing? I've been told in the past that multi piece wheels need to be resealed after any work undertaken on them, is this true? Also will I need proper Rays bolts or can I order some from a wheel specialist? Would really like to restore these as overall theyre in good condition for 16 year old wheels, and theyre hard to find nowadays...

If the bolts are already loose and they hold air you should be fine with just replacing. If they are tight but you want to remove them, you may partially create an air passage when removing it, but it is unlikely.
You can probably get by replacing each one at a time and torquing them before moving to the next one. But honestly, you should reseal them if you are taking bolts off/replacing etc, its just a little security.

Theyre on the car and holding air fine, theyre just a bit corroded but 16 years of Japanese salt roads will do that...
Would I be as well just taking each rim completely apart and go over everything? If so I may as well get them painted, lips polished, a barrel straightened, hardware replaced and the logos remade while im at it :pAGRORB - 93 Skyline HR32 GTS25 Type-M Anniversary

Take the tires down to 0PSI to avoid any additional pressure on the halves, and swap them out every other bolt and there will be no need to reseal. For example if there are 30 bolts, remove 15 at once, install 15 new ones, and then the same for the rest.
