Wheel fitment/ tire selection help

So I just recently picked up a staggered set of Epsilon wheels that I plan to run on my e30. Specs for the wheels are 16x7 et25 and 16x8 et12 5x130. I also picked up a set of adapters locally for a decent price and those are 4x100 to 5x130 25mm and 35mm. I was planning on running the 35s up front and the 25s out back for final offsets of -10 and -13 respectively. The negative offsets shouldn't be much of a problem with a fender roll and some stretch, the problem I'm running into is picking a tire size for the front. I realize stretched tires on a 7" wheel is kinda dumb but at this point its my only real option. So what tire size would you guys recommend for the fronts?
I was thinking about running 195/40 for the rears..
