This is with an 8.5 ET30... So if you like this look you could achieve this with the 52 Tarmac wheel no prob. Or because the wheel will be custom fit to your car, you could for a more aggressive fitment as well if you like. Just remember that when you lower the car the suspension articulation will change and the wheel will move in and out in relation to ride height.

Things that will help make the offset decision.
1. Picture(s) of your car on the stock 17x8 wheels so we can see what you're working with.
2. Measuring your current setup to see how much room you have between the wheel/tire and the fender.
3. Look around the volvo forum and see if anyone has a nice stance that you could base your offsets off.
If you have any of those, we can help you figure out the best offset for your car.

fenders are stock, but the wheels may have had a bit more negative camber than usual in that photo since the car was filled with enough stuff to lower it about 1-2 inches in the back

I assume your fenders are still stock?
Judging from that pic, with rolled fenders you may be able to go for an ET 15-ish.
Your best bet would be to measure how much room there is from your wheel to your fender's edge and them use a wheel calculator to calculate the necessary offset, to get the look you desire.

I wanted to run my stock tire width just on a wider wheel but to strech i'd need to go skinnier. guess i'd just have to take it easier

I'm not familiar with volvo fitment so I wasn't sure on sizes. At 8.5, these obviously won't be wide poking wheels, but I personally feel that the flush/tuck stance is more appropriate for wagons...especially ones with such flat side profiles like that volvo. Wide wheels and poke look better on sedans and hatchbacks that have flared fenders and that squat look. On my "wagon" I've only run 7.5's and 8's rather than the wider wheels I used to run on my coupe.
