Tire size and spacer help?

I just bought some 19x8.5 / 19X9.5 ET40 wheels for my E46 Sedan on racelands. I am waiting for the wheels to come in before I slam it. I have about 1-2" of thread left on the coilovers. I need to figure out what size tires (wider the better this car will get an AA supercharger in the winter.) I don't really want to pull my fender but I am sure I can get it rolled. What's the best tire size with not a ton of stretch and spacer for my combo?

205 40 all around and 20mm spacer front and 25 rear

ET40 all round? Don't use spacers and add 225 40 front and 255 35 rear. But yeah why don't you just measure things and stuff? Honest question there and not the least bit difficult
