18x8 and 18x10 are kinda hard to pull off an Audi because of the limited tire size combos you have to choose from to keep the AWD happy.
215/40 and 235/40 will work, but you're going to eat through front tires really quick because B7s don't have adjustable front camber so they're hard on tires when they're lowered. On top of that, the 4.2 V8 weighs a shit ton and no one makes a 215/40 that's weight rated for the B6/7 S4s, so it will eat tires even faster.
Personally, I'd go with either a 225/40 and 235/40 or a 225/40 and 255/35.
For offsets, you'll want the get the rear offset somewhere around et30 and the fronts something along the lines of et20.
For reference, these are were 18x10 et28 with 255/35s with the factory camber beyond maxed out (I modified the rear hubs to get another 1.5 degrees of camber) on my old B6:
The front wheels were 18x8.5 et37 with 225/40s. I should have ran a 10mm or 12mm spacer though to get them to sit better, bringing the offset down to et25 or so.
