Stance/low noob ?s

im kinda new to this whole stance world.i gotta mk2 golf with raceland coilovers. im looking to go wide but i dont know how wide yet. i wanna see what 15mm h&r spacers would do to the back. i plan on running 15x7 wheels 4x100, im also looking for some tires i can stretch one them but i dont know to much yet. im pretty looking for a good test on a budget. not to cheap.
