16x9's are going to poke up front in an e30 unless you run some camber, no matter what. et12 is the highest you can go before you hit the strut tube.
As for the rear, on a low car the camber makes the rear wheels sit about 12-15mm farther in than the front. So if you were running the 16x9 et12's up front you would want about et0 in the back to match.
If you go with staggered sizes:
1/2" stagger- 7mm less offset than the front
1" stagger- same offsets as the front
etc.
Remember that because of the strut tube angle,15's wont be able to run as high of offsets as 16's, and 17's will be able to run more.
