    Love Spicy Tuna. California Roll is meh and very basic. Good starter. Same deal with the spider roll. It is good but a good 'starter'.

    Need some sushi now... prefer Nigiri really though.

    Spider rolls are good. You can never go wrong with spicy tuna. Try it. You won't be disappointed.

    You can see the knife in picture 2. It is as you described. Flat and sharp on the other side. It is not of tip top quality though. It did work.

    I butchered the ebi... that is for sure!

    Thanks for the compliments. I need to make an attempt again. Would be try 4 or 5 now. I didn't take photos of the last couple. Only the first.

    If you're going to do ebi nigiri, it's best to butterfly the shrimp before you cook, so they lay on top of the nigiri more easily.

    Your nigiri rice balls look really good, are you hand-forming or using a mold? If by hand, that's very tough to get right, so you're owning shit if that's how you're making them. Rolls look very neat. Do you have a single-sided sushi knife? If not, get one, your fish/roll cuts will be 100x cleaner. Sushi Knives (Kataba) are only sharpened on one side and flat on the other, unlike a Western chef's knife.


    When I make sushi, I stick to Chirashi or Oshi-Zushi. I know how to do rolls, but they can be a pain, and I'm too lazy to make Nigiri. I'll make Onigiri and bring them to work though, usually with shiozake inside.

    Try it. The hardest part by FAR is making of the rice and it being quality. I have made sushi 3 times. I also all 3 times bought way too much stuff... and ended up with WAY too much extra. It wasn't pretty but I made it happen. First attempt:

    it was all simple stuff. tuna, shrimp, tempura batter, avocado, asparagus, oh and sushi rice and sushi paper. all in all only spend like $20
