I feel like a 225 that stretches well would probably fit my needs.

This will be more dependent on how your individual brand of tire that you choose runs than anything else. You will probably want to stay away from anything that comes recommended as a tire that "stretches well" as they typically run narrow. Alternatively a 215/45 up front and 235/40 rear in a brand that runs narrow and stretches well will work out for what you want to do as well.

This, unless you like rims that are bent to shit. I can say this with 10 years of running stretched tires

Well I basically want my quarter panel to sit between lip and tire so I figure I need a hard stretch. Im running 17x10 front and 17x11 rear. Most likely running 205-45 front and 215/45 rear. I was looking into the achilles atr sports. I heard they stretch really well.

A 215/45R17 on a 17x10 is already pretty intense of a stretch. You could put creditcards on inside of the lip. On a 11" I would probably run a 225/45R17

It is doable, depending on brand of tire and design of the barrel / lip.
The real question is, do you really need all that stretch?
